The exact details of EVH's signal chain are debated. The variac, dummy load, and possible use of an Echoplex for preamp boost are all part of the legend. What is certain is the combination of a hot humbucker, cranked Plexi, and lower voltage creating a compressed, harmonically rich overdrive.
